So what does make the perfect cheese topping? Well obviously the cheese should taste delicious but the texture is just as important as flavour. Some cheeses are too oily when melted, others have too much moisture and can make a pizza soggy. Some cheese doesn’t melt well at all and some hard cheeses lose a lot of their flavour once melted.
