What makes the perfect cheese for pizza?

Pizza is one of the most popular foods. Whether you prefer a thin crust or a deep pan, love a traditional Hawaiian or like to experiment with different toppings, there is one thing that is always key to a perfect pizza – cheese.

So what does make the perfect cheese topping? Well obviously the cheese should taste delicious but the texture is just as important as flavour. Some cheeses are too oily when melted, others have too much moisture and can make a pizza soggy. Some cheese doesn’t melt well at all and some hard cheeses lose a lot of their flavour once melted. Getting the right combination of cheese for your pizza is not always as easy as you might think.
